Revered as the capital of Taiwanese black teas, Yuchi Township is home to the Sun Moon Lake varieties, in particular the premium Ruby Black Tea (TTES No. 18). Thanks to the terroir of Sun Moon Lake which is similar to the tea growing region of Assam in India, Yuchi is singled out as testing ground for black tea plantation. 48 years of painstaking efforts gave birth to the premium ‘TTES No. 18’, cross-bred with native camellia and Myanmar tea, in 1999. Also called ‘Ruby’ for its bright red hue, the Sun Moon Lake black tea has risen to fame, first as a favourite among Chinese tea enthusiasts, then as a star product in global markets.

Early Shoots ’ – a special name for the spring batch of Ruby Black Tea – evokes the flavour of spring. After the bleak winter, the TTES No. 18 tee trees wake up to the caress of the spring breeze with the first sign of young shoots. The buds are gently plucked before and after the Vernal Equinox, and the process of drying then follows. With a subtle scent of sugar cane, the resulting tea tastes refreshingly sweet with no bitterness.

Brewing Tips:
  1. Add 7-10g of tea leaves into the teapot
  2. Pour boiling water into the teapot, rinse and drain
  3. Pour boiling water into the teapot again, cover to brew for about 50 seconds
  4. Pour the tea into a cup, serve hot
